Ice building up inside a commercial fridge or cool room almost always comes down to one of four things: the defrost cycle has stopped working, airflow across the evaporator is blocked, warm moist air is getting in past a door or seal, or the system is low on refrigerant. Each leaves a different pattern, and the pattern is usually enough to tell them apart before anyone opens a panel.
Ice is a symptom, not the fault
A refrigeration system is constantly pulling moisture out of the air inside the cabinet. That moisture condenses on the evaporator coil, freezes, and is then melted away on a defrost cycle and drained off. Ice only accumulates when that balance breaks down, either because more moisture is arriving than the system was designed to handle, or because the melting and draining part has stopped happening.
This matters because chipping the ice off fixes nothing. It will be back within days, and in the meantime the underlying fault is still shortening the life of the compressor.
Where the ice is tells you a lot
- Thick ice on the evaporator coil itself: the classic defrost failure. A failed defrost heater, timer or termination sensor stops the cycle running or ending correctly, and each cooling cycle adds to what the last one left behind.
- Ice on one section of the coil only: usually airflow. Stock stacked against the fan, a blocked return path or a failed fan motor means part of the coil never gets enough air across it, so that section runs colder and frosts first.
- Frost near the door, or on the door frame: warm humid air is getting in. Look at the seal, the hinges, the closer and whether the door is actually sitting square. In busy kitchens a door propped open during prep will do it on its own.
- Light frost plus poor cooling and a compressor that never stops: often low refrigerant. A low charge drops the coil temperature at the inlet and frosts it unevenly while the cabinet never reaches its set point.
The ones you can check yourself
Before calling anyone, three things are worth ruling out. Pull stock away from the internal fans and make sure nothing is blocking the return air path, because this is the single most common cause in a busy kitchen. Run a hand around the door seal for gaps and check whether the door closes fully on its own. Look at whether anything has changed recently: a new stock layout, a door left open during a delivery, or a controller someone adjusted during a clean.
If none of those explain it, the fault is inside the system and needs someone licensed. Defrost circuits, refrigerant charge and sealed-system work are not DIY territory, and guessing at them usually costs more than the original fault.
Why it is worth fixing quickly
Ice on an evaporator acts as insulation. The coil can no longer absorb heat properly, so the system runs longer and longer for less and less cooling. That shows up first on the power bill and then on the compressor, which is running far more hours than it was built for. A defrost fault costing a modest repair today becomes a compressor replacement if it is left through a summer.
If a fridge or cool room in your venue is icing up, the useful things to note before you call are where the ice is, whether the unit is still holding temperature, and whether anything changed in the days before it started.
